Why Glorious Greens? To be honest, a friend helped me come up with it. Would you have preferred LeannimalEats? I didn’t think so. Basically, I love spinach and trying to find new recipes that I can work my leafy friends into.

I hope this blog will help remind me of the things that matter in life as well as the things I am truly passionate about. I love to cook and I love fitness. I think I started begging my mom to help cook dinner when I was about 5-years-old. I vividly remember her letting me sit on the counter-top and watch her and after that I was hooked. I think I am happiest in the kitchen or trying new foods or wines. Sports and fitness have always played a big part in my life, I even won health student of the year 2001 (my senior year). In college, I developed an unhealthy relationship with food and working out which continued until my senior semester abroad. That semester I met so many girls that were confident with their curves and passionate about their cultures cuisine and this helped me heal and start to re-build my broken relationship with food.

Shortly after I returned to the states, I started dating EJ. I had never really bought into the phrase, “when you know, you know” until then. Although we had known each other for a few years, within a few weeks I knew this was the guy for me and I had met my match. In 2008, we got married and that day is still one of the best days of my life. Mushy, I know.

I am currently one year into my MBA (along with a full-time job) and although I like learning, I can’t wait to have a my life back. I’m almost done with my MBA and hope to finish my last 3 class this year. Cue the fist pumps.

I still committed making my health a priority in my life but as I new mom, I’m still trying to navigate between all my “hats” in life.  After pregnancy and labor I have a new found appreciate and love for my body, I’ve never been so impressed by the human body, it’s pretty ridiculous.

I am not sure what will come of this blog or how good I will be at photographing my food creations, but I have a lot to say and I hope that I can give support to others who are going through the same or similar struggles.

Disclaimer: I am by no means a professional writer and I’m fairly ADD (no seriously) and at times I forget words. Excited, yet?

I have a running list of things that I think should be free in life, because if everyone had access to these items we would all be more balanced and happy. 🙂

  1. Hey little girl. Love the blog. I also love your love and affection for the family, especially your big sis and big bro. They are pretty cool. But so are you!

    The blog is fun to read and the stories mixed in, especially about family are great.

    Good luck on this blog and meeting those goals you keep referring too. Most of your readers don’t know you like the “Old Man” does but they should know you have never exactlly taken a back seat to anyone in the drive for life, success, happiness, beat your opponent, etc. department.

    • Blushing…..thanks Papa. I love you! Although our life was a bit unconventional, I truly believe it brought us closer and perhaps its why homemade meals are so important to me. Our family meals never lacked love, laughter or the occasional food fight! 🙂 I would love to get my hands on some of Grams recipes and start making them…I’ll have to corner her in NC.
